Epsilon-Polylysine
Epsilon-Polylysine has antimicrobial activity against three common pathogens. It is a homopolymer of L-lysine. It is widely used as food preservative. It can inhibit the growth of Gram-positive and Gram-negative bacteria, yeasts, moulds, bacteria, etc.
