Cauliflower
Cauliflower contains many nutrients that can help prevent a range of diseases from cancer to cataracts. It is an important source of protein, thiamin, riboflavin, niacin, calcium, iron, magnesium, phosphorus, and zinc, and a very good source of dietary fiber, vitamins B6 and C, folate, pantothenic acid, and potassium. This cancer-preventing vegetable is low in saturated fat, and very low in cholesterol.
